Oyster and Artichoke Soup

 

1 cup flour

1 cup butter

24 small canned artichoke hearts

3 cups shucked oysters

1 quart cream

1 quart oyster juice

1 tbsp black pepper

12 dashes hot sauce

10 dashes Worcestershire

2 tbsp salt

½ cup Parmesan cheese

 

Make roux with flour and butter. Add chopped artichokes, let cook for 5 minutes. Add chopped oysters, cream, juice, black pepper, hot sauce, Worcestershire, salt and Parmesan cheese. Puree with hand blender, bring to a boil and reduce to a simmer for at least 20 minutes.
