French Onion Soup

French Onion Soup


3 lbs. peeled onions

4 tbsp butter

2 bay leaves

3 tbsp chef’s seasoning

1 quart beef stock

1 cup red wine (Merlot)

4 cups of veal stock

4 tbsp of veal glaze

½ cup demi glaze

3 tbsp salt

2 tsp non flavored gelatin

½ cup water


Cut onion French style. Separate into thirds. Add butter and 1/3 of onions to pan. Let simmer for 5 minutes. Add bay leaves, chef’s seasoning, beef stock, red wine, veal stock , veal glaze, demi glaze and salt. Let cook for 1 hour. Add 1/3 onions, let cook another hour. Mix gelatin and water, add to soup with 1/3 remaining onions. Whisk until gelatin dissolved.
