INGREDIENTS
6 – 6oz tilapia fillets
3 bell peppers julienned (red, green & yellow)
1 large yellow onion julienned
1/2 pound fresh mushrooms sliced
Granulated garlic
Parsley flakes
Salt & pepper
Extra virgin olive oil
Raspberry chipotle sauce
2 cups cooked rice or risotto
Paprika
6 pieces of aluminum foil (or parchment paper) for baking
PROCEDURE
- Put all julienned vegetables in a bowl.
- Add garlic, parsley, olive oil, salt and pepper. Toss together and set aside.
- Place fish on foil. Sprinkle with paprika, parsley and a little granulated garlic.
- Put a generous handful of mixed vegetables over fish.
- Top with raspberry chipotle sauce.
- Close foil, forming a pocket for the fish and sauce to cook, but make sure all sides are closed, so no sauces escape.
- Bake all packets of fish fillets on a baking pan or cooking sheet for about 15 to 20 minutes, at 400 degrees. Serve over rice or risotto, and ENJOY!
