Cafe by the River's Shrimp-Stuffed Potatoes

4 large potatoes, baked
1 Lb. peeled shrimp
1 stick of butter
1 cup seasoning blend (onions, celery, bell peppers)
8 oz. sour cream
1 cup shredded cheddar cheese
1/4 cup green onions, chopped

Slice baked potatoes in half lengthwise. Scoop out potato into a bowl.
In a sauce pan, cook shrimp, butter and seasoning blend until sauteed. Add to potatoes. Next add sour cream, cheese and green onions. Season with Tony's to taste. Restuff potato. Top with cheese and bake for 15 to 20 minutes.
