Pecan Squares

Stirrin' It Up: Pecan Squares (April 14)

Yields: 4 Dozen Pecan Squares


On April 6, 2001, National Pecan Month was established. Celebrate by making this sweet treat for the family! These pecan bars can be served as a party food or as a nice dessert with your favorite ice cream.

Ingredients for Crust:

2½ cups flour

½ cup brown sugar

2 sticks cold, unsalted butter, cubed

¼ tsp salt

Ingredients for Filling:

3 eggs

2¼ cups pecans, chopped

1 2/3 cups corn syrup

1 cup brown sugar

1/3 cup honey

6 tbsps unsalted butter, melted

1 tsp vanilla extract


Preheat oven to 350°F. Line a 9" x 13" metal baking pan with parchment paper. In the bowl of a food processor, pulse together flour, sugar and salt until combined. Slowly add in cold butter and pulse until mixture is coarse and crumbly. Press mixture evenly onto bottom of prepared pan to create a thin crust. Bake 20 minutes or until light brown. Remove crust from oven. In a large bowl, whisk together remaining eggs, corn syrup, sugar, honey, 6 tablespoons butter and vanilla until smooth. Fold in chopped pecans then pour pecan mixture over hot crust. Bake 25–28 minutes or until filling is set. Remove from oven and cool on a wire rack. Cut into 48 squares and serve.
