Broccoli And Apple Salad

Stirrin' It Up: Broccoli and Apple Salad (February 19)

Yields: 4–6 Servings


With its wide range of flavors and textures, nothing makes a more beautiful entrée salad than the combination of fruits and vegetables. The creamy and lite dressing makes this salad incredible.


4 cups fresh broccoli florets

2 large gala apples, cored and finely chopped

½ cup shredded carrots

¼ cup diced red onion

½ cup pecans, coarsely chopped

½ cup dried cranberries

½ cup lite mayonnaise

½ cup plain low-fat Greek yogurt

2 tbsps lemon juice

1 tbsp granulated sugar

salt and black pepper to taste


In a large bowl, combine broccoli, apples, carrots, red onion, pecans and dried cranberries. Set aside. In a separate bowl, whisk together mayonnaise, yogurt, lemon juice and sugar. Season to taste using salt and black pepper. Pour dressing over broccoli mixture and toss to coat. Chill in refrigerator until ready to serve.
