Quinoa Lentil Chili

Ingredients:

  • 1 lb ground beef, browned and drained
  • 1 onion, medium, diced
  • 3 garlic cloves, minced
  • 2 bell peppers, diced
  • 10 oz can Rotel
  • 15.5 oz can diced tomatoes
  • 15.5 oz can pinto beans, with liquid
  • 15.5 oz can kidney beans, with liquid
  • 3 cups beef broth
  • 11.5 oz can V8 Vegetable Juice
  • 1 cup dried lentils
  • 1 cup quinoa
  • 3 Tbsp chili powder
  • 2 tsp cumin
  • 1 Tbsp oregano
  • 1 tsp basil
  • ¼ tsp curry powder
  • ¼ tsp red pepper, optional

Method

Add all ingredients to the crock pot and cook on high for 6-7 hours. The recipe makes 10 servings- each one is about 300 kcals, 24g protein, 34g carbohydrate, 11g fiber, and 9g fat.
