1 cup cream cheese

¼ cup caster sugar

1 tsp vanilla extract

Ingredients for Brownie Mixture:

4 ounces bittersweet chocolate

½ cup unsalted butter

¾ cup light brown sugar

2 eggs, lightly beaten

½ cup all-purpose flour

Preheat oven to 325°F. Line an 8" x 8" baking pan with parchment paper and lightly coat with nonstick cooking spray. Set aside. To make cheesecake mixture, beat together egg, cream cheese, caster sugar and vanilla extract in a medium bowl using an electric mixer. Mix until smooth and creamy. Set aside. To make brownie mixture, melt chocolate and butter in a double boiler over medium-high heat. When mixture is melted, remove from heat, stirring well. Add light brown sugar and blend well. Slowly add 2 eggs, a little at a time, and beat well. Gently stir in flour. Spread two-thirds of brownie mixture over the base on prepared baking pan. Spread cheesecake mixture on top then spoon remaining brownie mixture in heaps. Using a skewer, swirl mixtures together. Bake 30–35 minutes or until center is just set. Remove from oven, cool on wire rack then cut into squares.
