Marvelous Marinara Sauce

A basic marinara sauce that gives you options. Serve with pasta and sprinkle with Parmesan cheese.

Makes 4 (1-cup) servings

Ingredients:

2 teaspoons olive oil

1/3 cup chopped onion

1 teaspoon minced garlic

1/4 teaspoon hot pepper flakes

1/4 cup fat-free chicken broth

1 (28-ounce) can diced tomatoes

1 teaspoon dried oregano leaves

1 teaspoon dried basil leaves

Method:

1. In large nonstick skillet, heat oil and sauté onion, garlic and pepper flakes 4 minutes or until almost tender. Add chicken broth and cook until liquid has evaporated, about 3 minutes.

2. Add tomatoes to skillet, bring to boil, lower heat and cook 5 minutes.

3. Add oregano and basil, cook on medium heat 10 minutes, stirring frequently.

Try adding capers or olives for added punch of flavor to this marvelous dish if that is your thing….it is mine!
