Seafood Martini from Shucks on the Levee

INGREDIENTS

2 ea - Jumbo Shrimp
2 oz - Jumbo Lump Crab Meat
4 ea - Marinated Crab Fingers
1/4 cup shredded lettuce

Avocado Relish:
1/2 tomato, small dice
1/2 avocado, small dice
1/2 tsp onion, small dice -- toss together

Marinade:
1/2 oz citrus vodka
1 T olive oil
1 T rice wine vinegar
1/4 t cumin, ground
1/4 t chili powder
1/2 t lemon juice, fresh
1/4 tsp cilantro, chopped
salt and black pepper to taste -- mix well

PROCEDURE

  • Add 2 tablespoons of marinade to relish, mix well.
  • Add 2 tablespoons of marinade to shrimp, crab meat and crab fingers, toss gently as not to break up the crab meat.
  • Place the shredded lettuce in a martini glass, top with avocado relish.
  • Add shrimp and crab meat. Garnish with crab fingers, fresh cut lemon wheel and a skewered olive.
