Marinated And Grilled Chicken Thighs With Spicy Yogurt Sauce

Grilling is a great way to infuse amazing flavor into chicken thighs. For best results, build a coal bed on one side of the grill. Place tenderloin away from hot coals, so it will receive medium-high heat. Do not overcook. Use a meat thermometer to monitor internal temperature of the chicken.

Ingredients:

8 boneless, skin-on chicken thighs, fat trimmed and each thigh cut into 3 pieces

½ cup plus 1 tbsp extra-virgin olive oil, divided

1 tbsp sweet paprika

¼ cup honey

¼ cup Worcestershire sauce

1 tbsp minced tarragon

1 tbsp minced thyme

2 tbsps minced garlic

Creole seasoning to taste

hot sauce to taste

salt and black pepper to taste

granulated garlic to taste

1 cup plain Greek yogurt

1 tbsp fresh lemon juice

½ tsp cayenne pepper

¼ tsp red pepper flakes

lemon wedges for serving

Method:

In a large bowl, whisk together ½ cup olive oil, paprika, honey, Worcestershire sauce, tarragon, thyme and minced garlic. Season to taste with Creole seasoning and hot sauce. Add chicken thighs and toss to coat well. Season to taste with salt, black pepper and granulated garlic. Let stand at room temperature 15 minutes. In a small bowl, mix together yogurt, lemon juice, cayenne, red pepper flakes and 1 tablespoon olive oil. Season to taste with salt, black pepper and granulated garlic. Mix well and set aside. Preheat grill according to manufacturer's instructions. Thread 3 pieces of chicken onto each of 8 skewers. Oil grill grate with remaining olive oil then grill chicken over medium-high heat, turning occasionally. Cook 10 minutes or until golden brown and cooked through. Transfer chicken skewers to a serving platter. Serve with spicy yogurt sauce and lemon wedges.
