Caprese Salad Appetizer


36 mozzarella pearls

36 cherry or grape tomatoes

24 basil leaves

1/3 bottle Salad Dressing

Balsamic reduction (made from 1/2 cup balsamic & 1 tbs. sugar)

24 skewers / picks / or toothpicks


Marinate mozzarella pearls in salad dressing for as long as you have to spare (at least 30 minutes but can be as long as a couple days in the fridge). Reduce balsamic vinegar in half by cooking balsamic and sugar on stove top over medium heat. Skewer half of your picks: one marinated mozzarella pearl, one basil leaf, one tomato, and one more marinated mozzarella pearl. Skewer the other half of your picks: one tomato, one basil leaf, one marinated mozzarella pearl, and one more tomato. Pour Re: marinade over Caprese skewers. Right before serving, drizzle vinegar over skewers. Enjoy.
