These festive cookies are great for holiday parties. Dry cranberries can be found in the self-serve bins in the produce section of large supermarkets.
INGREDIENTS
1/2 cup margerine or butter, softened
1 1/3 cups granulated sugar
1/2 cup fat free Egg Beaters or 2 eggs
1 tsp butter extract
1 3/4 cups all-purpose flour
1 cup rolled oats
1 1/2 tsp baking soda
1/2 tsp salt
1 cup dried cranberries
2/3 cup white chocolate chips (vanilla milk chips)
PROCEDURE
Preheat oven to 350 degrees. Spray cookie sheets with nonstick cooking spray. In a large, beat margarine and sugar until well blended. Add eggs and butter extract; mix well. Lightly spoon flour into measuring cup; level off. In small bowlcombine flour, rolled oats, baking soda and salt. Stir into margarine mixture. Stir in cranberries and white chocolate chips. Drop by tablespoons 2 inches apart onto spray coated cookie sheets. Bake at 350 degrees for 9-11 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheets. Cool completely on wire racks. Store in tightly covered container.
