The Crawfish Boil

Crawfish Patty

2 lb. crawfish tails, rinsed

1 lb. Smoked Sausage

1 tsp. crawfish boil seasoning

2 oz. green onions, chopped

2 eggs, beaten

1 c. panko

1 tsp. salt

Roughly chop one pound of crawfish tails and the sausage, leave the other pound of crawfish whole and put in a mixing bowl, add the seasonings, eggs, green onions and panko and fold together.

Potato pancake

4 cooked potatoes, grated

1 c. flour

2 eggs, beaten

1 tsp. crawfish boil seasoning

¼ c. parsley

1 tsp. salt

½ tsp. ground black pepper

Combine all ingredients in a mixing bowl

Fried Green Tomato

½ inch slice of green tomato

Seasoned flour

Egg wash


Dredge tomato in seasoned flour, egg wash, then panko. Fry at 350 degrees until golden brown

Budweiser Corn Relish

3 c. corn kernels

1 c. diced roasted red peppers

12 oz. Budweiser, reduced by half

1 tsp. crawfish boil seasoning

1 c. diced green onion, chopped

1 c. diced red onion

½ tsp. salt

½ tsp. ground black pepper

Put Budweiser in a skillet, add all seasonings and reduce by half. Add the frozen corn and toss. This will thaw out the corn and cool the reduction. Add the remaining ingredients, combine thoroughly.
