French Onion Soup from Doe's Eat Place


Makes 4 servings


1 oz butter 1 qt Fresh Beef Stock

1.5 lb Onion, sliced medium thick Black Pepper and Salt to taste

1 tsp Kosher Salt French bread, sliced thin

1 oz Young Chardonnay Gruyere Cheese, grated


1. Add onions, butter, and salt to a medium sauce pot over medium high heat. Sweat until the onions brown.

2. Deglaze the bottom of the pot with chardonnay.

3. Add stock and bring to a boil.

4. Season to taste with salt and black pepper

5. Melt gruyere cheese on French bread and float on cup of soup

Beef Stock

Makes approximately 1 quart


2 lbs Beef Bones

Pinch of Dry Thyme

2 oz onions

chopped Bay leaf

1 oz carrot

chopped Parsley

1 oz celery

chopped Black Pepper

1 tbsp Tomato paste

1 oz Cabernet


1. Roast the beef bones in a 450F oven until nicely seared and brown

2. Add some of the fat from the roasted bones to a stock pot along with the vegetables. Sauté until soft.

3. Add the tomato paste to the vegetables and continue cooking until aromatic.

4. Add the roasted bones and remainder of ingredients to the pot. Cover with water and simmer for 8-10 hours

5. Strain through cheese cloth. Use immediately or divided it up and freeze for 2 months
