Catfish Colin from the Lobby Cafe

Ingredients:

6 6 oz. Catfish Filets

3 TBSP Butter

2 Cups Chopped Mixture of Onions & Bell Pepper

3 TSP Chopped Garlic

2 10 oz. packages of frozen chopped Spinach thawed and drained

2 14 oz. cans of Artichoke Hearts drained and quartered

2 Packages of Cream Cheese

1 Pound of Claw Crabmeat

1 Pound Chopped Pepper jack Cheese

Salt, Pepper, White Wine to Taste

Method:

Preheat Oven to 350 deg. On an oiled baking pan, season catfish filets with your favorite seasoning shake. Cover with foil and bake catfish for 20 min.

In large skillet, melt butter and sauté chopped onions & bell pepper, and garlic until wilted. Add spinach and artichoke hearts and sauté another 10 minutes. Add cream cheese, claw crabmeat, and pepper jack and cook until smooth. Salt and pepper to taste---- add a dash of your favorite white wine for a special touch!

Top catfish filets with mixture and VIOLA!
