Katrachos Enchiladas


12 corn tortillas

1 green pepper diced

half cup of shopped cilantro

1 onion diced

1 tomato diced

3 garlic cloves shopped

2 cans of tomato sauce

1 pinch of sugar




4 Boiling eggs

1 small head of shredding cabbage

1 cup of shredding dry cheese or parmesan cheese.


The Meat:

Dice the following and mix well into a pound of ground beef.

Half onion

2 cloves of garlic chopped

half green pepper

1 tomato diced

Lots of cumin, salt and pepper for taste.

In a large pan, fry meat mixture until cooked through.

Remove from heat and cover until time to serve.

The sauce:

Saute half onion and 1 garlic clove in oil,Until onion is clear.Add tomato sauce and bring to boil. Add salt,pepper to taste.At the end add a pinch of sugar and mix,put the cilantro in the boiling sauce.Remove from heat and cover until time to serve.

The Tortillas:

Fried the corn tortillas in plenty oil.


Over the tortilla, put the meat, add a small amount of shredded cabbage; Cover generously with the dry cheese or parmesan cheese. Drizzled the sauce over the top,and last; put a sliced of boiled egg on the top.
