Crab Tacos from Lava Cantina

Crab Cakes

Ingredients:

1/2 pound lump crab meat
1 cup bread crumbs
1 egg
1 cup mayonnaise
1/3 cup chopped green bell pepper
1/3 cup chopped cilantro
1 tablespoon lime juice
1 teaspoon minced garlic
1 teaspoon salt

Method:

Combine all ingredients. Form into 4 patties and fry in pan with a small amount of oil until patties are golden brown. Approximately 2-3 minutes.

Sauce

2 tablespoons butter
1/2 oz chopped green bell pepper
1/2 oz chopped red bell pepper
1 oz yellow corn kernels
1/4 oz minced serrano pepper
1/4 cup of heavy cream
pinch of sugar

Method:

Saute vegetables in butter until wilted. Add sugar and cook for 2 more minutes. Add heavy cream and reduce sauce for another 5 minutes.

 

Tacos

Ingredients:

4 crab cakes
Sauce
4 oz of shredded lettuce
1 oz of spicy mayo
2 tortillas

Method:

Divide lettuce, mayo and sauce between the 2 tortillas. Lay 2 crab cakes on top of each tortilla. Fold over and serve.
