Shrimp Tacos - Lava Cantina

Ingredients

6 oz shrimp

1/2 oz olive oil

1/2 oz diced onions

1/2 oz diced green bell pepper

1/4 oz diced serranos pepper

1/4 oz minced garlic

pinch of Mexican spice

1/4 oz tequila

4 tortillas

veggie mix

shredded lettuce

shredded cheese

pico de gallo

sour cream

 Method

Pour oil in saute pan on medium flame. Add the onions and bell pepper and cook until soft. Add shrimp, garlic, serranos, and Mexican seasoning. Cook for 7 minutes, or until shrimp are cooked. De glaze the pan with tequila and let simmer for 1 minute.

Place veggie mix in the tortilla, then add shrimp, lettuce, cheese, and pico de gallo. Top with sour cream.
