Shrimp and Crab Enchilada - Mestizo's


8 oz. Trinity (Equal parts celery, onion and green bell pepper)

1 oz. Butter

2 oz. flour

8 oz. Heavy Whipping Cream

8 oz. White Melting Cheese

1 oz. Salt

1 oz. White Pepper

1 oz. Granulated Garlic

8 oz. Boiled Shrimp

8 oz. Crabmeat

4 corn tortillas


Saute Trinity in a skillet with butter until fully sweated. Add salt, pepper, and garlic. Thicken with flour and then add heavy whipping cream. Bring down to a simmer and then add cheese, shrimp, and crabmeat. Roll into a corn tortilla and melt cheese and serve with your favorite garnish.
