Halaine's Souped Up Taco Soup from Weight Watchers
- 1 Tbsp Olive Oil
- 1 pound of lean beef or lean ground turkey
- 1 Onion
- 1 Bell Pepper
- 1 Stalk of Celery
- 1 Small Sweet Potato
- 1 Sm-Med Turnip
- 3 Carrots (optional)
- 1 can of rotel tomatoes
- 1 can of fire roasted tomatoes
- 1 Large can of crushed tomatoes
- 1 bag of frozen corn
- 1 can of black beans, rinsed & drained
- 1 packet of 33% less sodium taco seasoning
- 1 packet of ranch dressing mix
- 1 diced zucchini
- 1-2 cups of chicken broth
In a large pot, 7-8 qt, add olive oil. Brown beef or turkey. When almost
done, saute onion, bell pepper, celery, shredded sweet potato, shredded turnip,
and shredded carrots. Chop and drop each one and saute until they are tender.
Once vegetables are soft, start adding cans of tomatoes, corn, beans, and
mixes. Add 1-2 cups of chicken broth. Once you have all of these in the pot,
chop and drop your zucchini. Cook at low-medium to medium heat until zucchini
are cooked, about 10 minutes.
