Chicken Cajun Bleu from Ralph & Kacoo's

INGREDIENTS for Cheese Sauce:

Serves 10-12 people

1 quart heavy whipping cream
1/4 lb. American cheese
1 cup Parmesan cheese
1/8 lb. butter
1/8 cup chicken base
1 tsp. chopped garlic
2 tbs. corn starch
1/4 cup water

PROCEDURE

  • Mix corn starch and water in a small bowl.
  • Place all other ingredients in a large sauce pot and bring to a boil.
  • Add corn starch mixture and reduce heat.
  • Simmer 5 minutes.

The following ingredients are per serving:

8 oz. Chicken Breast
Sliced pepper jack cheese
1/2 cup cooked crawfish tails
1/4 cup julienne tasso ham
2 tsp. butter
Slice chicken breast in half.

PROCEDURE

  • Grill both pieces until cooked thoroughly.
  • Sautee' crawfish tails and tasso ham with butter in separate pan.
  • Add tasso ham and crawfish tails to cheese sauce and stir well.
  • Sandwich pepper jack cheese between pieces of grilled chicken breast.
  • Ladle cheese sauce over chicken. Serve immediately.
