Ingredients
2-4 lbs. green beans (depends on # of people being served)
1/2 stick salted butter (may substitute olive oil, margarine or combination)
2 cloves garlic, minced
1 sweet onion, chopped
3 stalks celery, chopped
1 small/medium size ham hock (may substitute a cottage butt of equal size, although the final product is not as flavorful)
salt and pepper to taste (I use NO salt except for the salted butter, the pepper is a 5-pepper blend which includes Allspice)
Directions
In large pot, melt salted butter (or combination) over medium-high heat
Add garlic, onion, and celery and saute until opaque (about 4-5 minutes)
Fill pot with hot water, return to heat and bring to a boil
Add beans and ham hock, bring to a boil then reduce heat and simmer for 3+ hours
