Ingredients:
1 lb. Cajun Grill Smoked Alligator & Pork Sausage, sliced and diced.
1 cup diced Onion
1 cup diced Bell Pepper
1 diced Roma Tomato
1 tablespoon minced Garlic
1&1/2 cup shredded Cheese
1 tablespoon parsley
1 teaspoon Cajun Seasoning
8 Eggs
1 cup milk
Hot sauce
Method:
Pre heat oven at 350 degrees
Sauté Alligator sausage, onions, bell pepper, garlic about 10 minutes.
Whisk eggs, milk, Cajun seasoning, parsley, dash of hot sauce.
Use a 10 x 10 x 2 casserole dish, lightly cover with non-stick cooking spray. Add sauteed sausage, pour in egg blend, add Roma Tomatoes, cover with cheese.
Bake at 350 uncovered for 25-30 minutes or until golden brown.
