Bread and tomatoes go beautifully together in this easy to make salad.
Toss cubes of toasted or slightly stale good quality bread, chunks of a juicy tomato (remove skin), plenty of olive oil, vinegar, sliced red onion, chopped celery, chopped basil or parsley, salt and pepper.
Let the mixture sit for about 30 minutes before serving so the flavors can meld together.
