Ingredients:
8-10 sweet potatoes (I use canned when in a hurry)
½ teaspoon butter flavoring
½ cup butter (softened)
2 eggs
½ cup milk
1 ½ cups sugar
½ teaspoon salt
2 ½ cups miniature marshmallows
Topping:
( I double this recipe per one batch of sweet potatoes )
1/3 cup self-rising flour
1 cup brown sugar
1/3 stick butter, melted
1 cup pecans, chopped
Method:
Boil sweet potatoes, and whip. Add remaining ingredients and whip until fluffy. Pour into casserole dish. Combine topping ingredients and spread over sweet potatoes. Bake at 350 degrees for 35 minutes.
