Creamy goat cheese deviled eggs with herbs

8 hard-cooked eggs, halved width-wise, yolks separated
3 ounces soft goat cheese, crumbled
6 tablespoons mayonnaise
2 teaspoons minced shallots
2 teaspoons minced fresh dill
½ teaspoon Dijon mustard
¼ teaspoon salt
Dash pepper

Total Time: 30 minutes

Directions

Reserve 2 eggs whites for another purpose.
Place 8 egg yolks in the bowl of an electric mixer.
Add goat cheese, mayonnaise, shallots, dill, mustard and salt; beat until smooth.
Spoon or pipe mixture into egg whites.
Garnish with additional minced dill.
Top with a grind of black pepper.
