Brad's Chicken with a bite

We are not talking about the typical pour some pre-bottled Lawry's marinade on the chicken and then grill it.

This is a marinade I made up one day with random ingredients in my kitchen. It really has no set list of ingredients or how to's but it's delicious.

The recipe continues to evolve, adding and subtracting elements depending on what I have around the pantry. However, there are some main components.

So here you go.  

For the chicken, I use wings, breasts and thighs(boneless).

In a bowl I combine:

Worcestershire sauce
Little bit of soy
Balsamic (gives chicken a real nice brown color)
Lime juice
Diet coke
Fresh minced garlic
Red pepper flakes
Oregano
Green hot sauce
Sriracha sauce
Salt
Pepper

Unfortunately I don't have measurements for the liquid. I'm more of an eye test chef. A little here, a little there.

Mix all that up and then pour it over the chicken in a baking dish or you can use freezer bags.

I let the chicken hang out in the marinade for several hours. For this competition I will let it soak for about 8-10 hours(while I'm sleeping) You can leave it in the marinade for up to a day.

Get the coals nice and hot, then let them calm down a little.

Then throw those bad boys on the grill.

I put my skin side up first.

Don't touch until you flip. About  7-8 minutes on the first side. With high heat, you only need about 10 minutes total.

Then before flipping, I brush the skin side with a little balsamic mixed with oregano and spicy guajillo peppers that I have ground up in a coffee grinder, you can use a blender too.

The Guajillo pepper should be stemmed. You can leave the seeds for heat if desired or take them out to keep the flavor and lose the heat.

I plate the chicken and garnish with lime wedges and cilantro.
