Camarones a la diabla

Ingredients

9 Large Shrimp

2 Small Heads of Garlic (minced)

1 oz Fresh Parsley (chopped)

3 oz Canned Chopped Tomatoes

4 Chipotle Chilies (chopped)

White Rice

Lettuce

Avocado

Salt, Pepper, and Crushed Red Pepper to taste

Method

Saute Shrimp in butter, garlic and parsley for 3-4 minutes. Top with tomatoes, chilies, a pinch of crushed red pepper and continue to boil for 3 minutes.

Serve over bowl of white rice with a side salad of lettuce topped with sliced avocado.
