Pesto Shrimp Pasta from The University Club


1 Tbsp  Olive oil
6-8 Jumbo shrimp
1 tsp garlic minced
1 Tbsp Fresh basil - ribbons
3 Tbsp Pesto
3 oz  Heavy cream
Creole spice to taste
8 oz Penne pasta, cooked
1 Tbsp Parmesan


  • In a skillet, heat olive oil. Saute shrimp until almost done. Add garlic and basil. Saute for 1-2 minutes until garlic begins to caramelize.
  • Add pesto, Creole spice, and heavy cream. Stir to incorporate sauce and reduce until sauce is thick and will coat pasta. Add pasta and toss to completely cover pasta.
  • Pour onto a plate and top with Parmesan cheese.
