Ingredients:
- 1 lbs Louisiana Alligator Meat
- 3 tbsp vegetable oil
- 3 tbsp blackening seasoning
- 1/2 cup sauteed onions, red and green bell pepper
- 2 cup cheese blend (cheadder, pepper jack, and Monterey jack)
- four 8 inch tortillas
- Optional
- Sour Cream
- Guacamole
- Remoulade Sauce
Cut alligator fillet into small pieces then coat with oil. Mix in blackening seasoning and let marinate for 2-3 hours.
Place onions and bell peppers in a hot black iron skillet, sprinkle with blackening season and cook for 2-3 minutes. Add seasoned gator and cook until medium temperature, stirring constantly.
Melt cheese each tortilla either in a frying-pan or under the broiler. When cheese is nearly melted, place gator and peppers on the tortilla and assemble the quesidilla.
Place quesadilla in frying-pan for an additional 1 to 2 minutes on each side until cheese is melted thoroughly and the tortilla is semi crispy. Cut into six triangles and serve with sour cream, guacamole and remoulade sauce. Garnish with parsley and paprika. Enjoy!!
