Tomato Gazpacho
1 lb fresh tomatoes (appx1/4" dice or small dice)
1 sweet bell pepper (red,yellow, or orange)small dice
1 small red onion (sweet onions work well too!)small dice
3 cucumbers-peeled and seeded-small dice
1 spicy pepper (up to you, we use a serrano, but jalapeno or hotter will work)
-seed and mince
5-7 good size basil leaves
2 tb chopped up fresh oregano
3-4 sprigs of fresh thyme- leaves pulled from stems
1 cup of tomato juice
1 tsp crushed red chili
1 tsp paprika
sea salt and coarse black pepper to taste
Procedures:
Dice all veggies, and chop all herbs. Add half of veggies and herbs to a food processor, and pulse until smooth(making sure to scrap the sides during)
Mix pureed veggie mix with the diced veggies and herbs. Add spices tomato juice, vinegar and oil, stir until all ingredients are incorporated.
Refrigerate until cold, taste, and season with salt and pepper if you wish.
