OLOL's Turkey & Wild Rice Salad


4 cups cooked wild rice
1 1/2 cups coarsley chopped turkey
1 cup coarsley chopped Roma tomatoes
1/2 cup chopped green bell pepper
1/2 cup chopped green onions
1/4 cup chopped parsley

1/4 cup balsamic vinegar
1 Tbsp. canola oil
1/2 tsp. ground ginger
1/2 tsp. minced garlic

In a large bowl, combine the cooked wild rice, turkey, tomatoes, green pepper, green onions, and parsley.  In another snall bowl, combine the vinegar, oil, ginger, and garlic, mixing vigoriously.  Pour over the turkey mixture and toss well.  Spoon the salad onto a large serving platter lined with lettuce leaves.
