Creole Red Beans and Rice

2 lbs. Red Kidney Beans                                         2 ½ quarts water

4 cups chopped onions                                            Tony Cachere Creole Seasoning  

1 lb. Smoked Sausage                                            Red Cayenne Pepper

            (cut into ¼" lengths)                                       Salt

 

Place all ingredients into an appropriate sized pot. Bring water to a boil. Then, reduce heat, season to your taste, and cook on low heat for approximately 4 hours, or to your desired consistency (adjust water amount to your desired consistency). Serve over rice

                                                                        Makes approximately 1 gallon
