Ingredients:
4 (8 oz.) Filet Mignon, USDA Choice or higher
fine sea salt and freshly ground black pepper to taste
2 Tablespoons butter
1 bunch thyme, trimmed
1 clove garlic, smashed
Method:
Allow the steaks to sit at room temperature for one hour. Season generously with sea
salt and fresh ground black pepper. To pan roast, turn on the oven to 350 degrees F,
then heat a cast iron skillet or French Steel pan over medium high heat. Melt the butter
and add the steaks, thyme, and garlic. Baste the steak with the melted butter. Do not
move the steak for 5 minutes. Turn the steaks over. There should be a nice crust
formed. Place the whole pan in the oven and allow to cook about 6 minutes for
medium rare. Check for doneness and remove from the oven. Allow to rest for 5 to 10
minutes.
