Louisiana Culinary Institute's Grilled Tuna Steaks and Fruit Salsa


4 center cut fresh tuna fillets 6-8 ounces each

3 tbsp olive oil

1 tsp minced garlic

1 tbsp minced red onion

1 fresh habanero, minced, seeds removed

Juice from one lemon

1/4 tsp ground cumin

1/2 tsp minced cilantro

Pinch of fresh ground pepper

Cajun seasoning to taste

Combine all ingredients except tuna in a large bowl and mix. Pour the mixture over the tuna steaks and let sit for 1 hour under refrigeration.  Season tuna with Cajun seasoning and grill tuna on high on a preheated grill, approximately 3 minutes on each side. Serves 4

Fruit Salsa

1 papaya, medium dice

1 mango, medium dice

1 cup fresh pineapple, medium dice

1/4 cup minced red pepper

1/4 cup minced red onion

Juice from 1/2 lemon

1/8 cup rice vinegar

2 tbsp fresh minced cilantro

1 tbsp raw cane sugar

Combine all ingredients. Makes 3 cups of salsa.
