Tikka Chicken Masala from The Londoner Pub & Grill

Tikka Chicken Marinade

• 2 tbsp tandori spice

• 3 c yogurt

• ¼ c lemon juice

• ¼ c cumin

• 1 ½ tbsp. cinnamon

• 1 tbsp cayenne

• 1 ½ tbsp. black pepper

• ¼ c minced ginger

• ½ bag of cleaned and chopped 1" chicken pieces

1) Toss chicken pieces with yogurt marinate to cover chicken. You probably will not use all of marinade. Save excess marinade.

2) Cook chicken on sheet pan for 6 minutes @ 350

3) Let cool and portion to 5 oz

 

Tikka Sauce

• 1 c minced ginger

• ½ c oil

• 3 yellow onions, rough chopped

• ½ c minced garlic

• 6 tbsp crushed red pepper flakes

• 1 c cumin

• 1 c paprika

• 2 #10 cans diced tomatoes

• ½ c sugar

• 4 ½ qts cream

• 3 cans coconut milk

• 3 c chopped cilantro

• 6 tbsp tandori spice

1) Saute onion, garlic, and ginger for 2 minutes

2) Season with cumin, paprika, and crushed red pepper. Stir in tomatoes, sugar, coconut milk, and cream

3) Simmer until sauce thickens about 30 minutes

4) Puree with stick blender and add chopped cilantro

 

Basmatti Rice

• 9 c rice

• 13.5 c chicken stock

• 2 tbsp salt

• 4 yellow onion, small diced

• 4 red bell pepper, small diced

1) Place all ingredients in hotel pan and cover with foil

2) Bake @ 400 for 35 minutes
