Jill Corbett's Crawfish and Potatoes

Crawfish and Potatoes

1/2 bell pepper

shallots

1 onion

1/2 tsp garlic

parsley

1 block butter

1 can cream of mushroom soup

1 8 oz. jar cheese whiz

6 to 10 potatoes

1 Lb crawfish tails

peel and dice potatoes. Par boil (no longer than 10 minutes) Saute bell pepper, onion, parsley, garlic in butter. Add cream of mushroom and cheese whiz and melt down. Add crawfish, saute for a few minutes. Remove from heat and add potatoes. Stir until well mixed and put into a 9x13" baking dish. You can cover woth a coat of bread crumbs if you like. Bake for 30 to 40 minutes at 350 degrees. Enjoy dem crawfish and dem potatoes smothered in dem ceese.
