
Hawaiian Sweet Potatoes

6-medium-sized sweet potatoes, cooked & smashed
2/3 cup drained crushed pineapple
1/4 cup orange juice
1/3 cup half-and-half|
1/4 cup firmly packed brown sugar
1/4 cup butter or margerine
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 cup flaked coconut
Combine sweet potatoes, pineapple, & orange juice; mix well. Combine half-and-half, brown sugar & butter; cook over low heat, stirring constantly, until butter is melted. Add to potato mixture along with salt and cinnamon; blend thoroughly. Pour into a lightly greased shallow casserole; sprinkle with coconut. Bake at 400 degrees about 10 minutes or until coconut is lightly toasted.
Yield: 8 to 10 servings
