Bayou Pasta from Opie's Cajun Cafe


4 oz of crawfish
4 large shrimp
7 ounces of heavy cream
2 ounces of unsalted butter
1 chicken breast
1 oz of green onions
1.5 teaspoons of seasoning
1 oz of Parmesan
4 oz of linguine pasta


Place 1 oz of butter on your griddle and begin blackening your chicken breast. While chicken is cooking begin sauteing 2 oz of butter with your crawfish, shrimp, green onions, and seasoning. Let cook down for about 2 minutes. Add your cream and let reduce for 3 minutes. Add your Parmesan cheese and let cook for an additional 20 seconds. Place sauce over the linguine pasta and finish with your blackened chicken breast strips.
