Italian Gravy from the Italian Fest

Yield: 12 quarts

INGREDIENTS

2, 11 oz. cans of tomato puree
6, 6 oz cans of tomato paste
2, 15 oz cans tomato sauce
oregano
Italian Seasoning
parsley flakes
basil leaves
parmesan cheese
chopped onion and garlic
sugar
oil
salt
pepper

PROCEDURE

  • First, add 1/2 cup oil to pot. Then add chopped onion and garlic. Let saute until caramelized.
  • Then add tomato paste and let cook for 10 minutes. Stir constantly while cooking paste and then add tomato puree and tomato sauce.
  • Add 2 Tbsp of each of the following spices: salt, pepper, basil leaves, parsley flakes, Italian seasoning, and oregano.
  • Then add 1 cup of parmesan cheese.
  • Fill each tomato paste can with water and add to the mixture.
  • Let this cook on low heat for 2 hours. Then add 2 cups of sugar and cook for 30 minutes.
  • Stir occasionally while sauce is cooking.
