Shrimp and Artichoke Dip from Don's


1 oz olive oil
1/2 Red Bell Pepper
1/2 Green Bell Pepper
1/2 Yellow Bell Pepper
4 oz Green onion
1/2 Tablespoon Chicken Base
1 teaspoon all purpose seasoning
1 pint Mayonnaise
4 oz Parmesan Cheese
4 oz Romano Cheese
2 pt Artichoke Hearts


Heat olive oil in skillet, sauté vegetables, add chicken base, shrimp and seasoning. Combine mayo, 2 oz each of the cheeses and the artichoke hearts in a shallow casserole dish. Add sautéed mixture to artichoke mixture in casserole dish. Combine. Sprinkle remaining 2 oz each of the cheeses on top, bake for 15 minutes in a 400 degree oven … or until lightly browned and bubbly.
