Pork
INGREDIENTS
1 Pork Shoulder/ Roast
1/4 cup salt
1/4 cup black pepper
PROCEDURE Salt and pepper the pork shoulder, set inside crockpot. Fill the crockpot with water, about 2/3 full. Let it cook on high for 3 1/2 hours, and let cook on medium for 2 hours. You want to cook the pork long enough that the pork pulls very easily with almost no resistance.
Thai Slaw
INGREDIENTS
1 Head of Cabbage
2 carrots
8 cups vinegar
2 cups soy sauce
3 cups sugar
4 tbls chili flakes
PROCEDURE: Thinly chop cabbage and shave carrots as if making regular cole slaw. Get a medium sized pot, pour in vinegar, soy sauce, sugar, and chili flakes and bring to a boil and turn off. Put the chopped cabbage and shaved carrots into a container and pour vinegar/soy sauce/sugar into the container. Place a lid over the container but don't close it all the way. Let it come to room temperature and then close the lid and put into refrigerator.
Hoisin Sauce
INGREDIENTS
4 tbls soy sauce
2 tbls peanut butter
1 tbls honey
2 tsp seasoned rice vinegar
1 minced garlic clove
2 tsp sesame oil
1 teaspoon Chinese hot sauce
1/4 teaspoon black pepper
PROCEDURE: Place all ingredients in a bowl and whisk together.
Taco Assembly Process: Take pulled pork put on taco, put 2 tbsp of hoisin sauce over pork, and put Thai Slaw on top.
