Italian Glazed Stuffed Pork Loin from Louisiana Sisters'

INGREDIENTS

1 (3 lb) pork loin roast, butterfly (ask butcher or go online to see a demonstration on how to butterfly)

1 jar (7 oz) Louisiana Sisters' Spiced Tapenade

Olive Oil

Creole Seasoning to taste

3 tablespoons Louisiana Sisters' Pepper Jelly

PROCEDURE

  • Flatten roast with a mallet to about 1/2 inch thickness.
  • Spread roast evenly with olive tapenade.
  • Roll roast and tie with kitchen string at 1 and 1/2 intervals. Place roast seam side down in a roasting pan.
  • Rub roast with 2 tablespoons olive oil. Season with Creole Seasoning.
  • Bake, uncovered at 350 degrees for 45 minutes, or until meat thermometer reads 160 degrees.
  • Microwave pepper jelly for 10 seconds. Brush on the outside of the roast. Bake an additional 5 minutes
  • Let roast rest for 15 minutes.
  • Serves 8-10.
