INGREDIENTS
1 (3 lb) pork loin roast, butterfly (ask butcher or go online to see a demonstration on how to butterfly)
1 jar (7 oz) Louisiana Sisters' Spiced Tapenade
Olive Oil
Creole Seasoning to taste
3 tablespoons Louisiana Sisters' Pepper Jelly
PROCEDURE
- Flatten roast with a mallet to about 1/2 inch thickness.
- Spread roast evenly with olive tapenade.
- Roll roast and tie with kitchen string at 1 and 1/2 intervals. Place roast seam side down in a roasting pan.
- Rub roast with 2 tablespoons olive oil. Season with Creole Seasoning.
- Bake, uncovered at 350 degrees for 45 minutes, or until meat thermometer reads 160 degrees.
- Microwave pepper jelly for 10 seconds. Brush on the outside of the roast. Bake an additional 5 minutes
- Let roast rest for 15 minutes.
- Serves 8-10.
