INGREDIENTS
12 hard cooked eggs
1/3 cup mayonnaise
4 tsp. prepared mustard
1/4 cup drained sweet pickle relish
12 pimento_stuffed olives
PROCEDURE
- Cut eggs lengthwise into halves; remove yolks.
- Place yolks in a small bowl and mash with a fork.
- Add mayonnaise, mustard and pickle relish.
- Season to taste with salt and pepper.
- Spoon filling into egg halves.
- Garnish with olive halves to make eyeballs. Makes 12.
- Note: To make extra scary bloodshot eyes, spoon ketchup into small resealable plastic food storage bags. Cut off a very tiny corner of bag; drizzle over eggs.
