Grilled Shrimp Pita Roll from Phil's Oyster Bar

Grilled Shrimp Pita Roll with Cucumber Tomato Avocado Relish and Tsziki Sauce

For The Relish:

1 cup diced Roma Tomato
1 cup peeled seeded diced Cucumber
1 cup diced Avocado
1/2 cup diced Onion
1/4 cup Olive Oil
2 tbl. Lemon Juice
salt and pepper to taste

Combine al ingredients in a glass mixing bowl cover and let marinate.

For The Tsziki Sauce:

2 cups fat free yogurt
1 cup cucumber puree
2 tbl. minced Cilantro
2 tbl. minced mint
1 tbl. Lemon Juice
2 tsp. garlic powder
salt and pepper to taste

For The Roll:

6 medium Shrimp peeled and butterflied
1 each Pita Bread
Shredded Lettuce
Crumbled Feta Cheese

Grill 6 medium shrimp seasoned with salt and pepper. Lightly butter the pita bread and grill it for 1 minute on each side. Lay the pita bread flat and in the middle line with the shrimp lettuce, tomato avocado mixture and feta cheese. Drizzle over with tsziki sauce and enjoy.
