INGREDIENTS
4 yellow squash
1 tablespoon reduced fat margarine
1/2 cup 97% fat free pork sausage
1/2 cup onion
1/2 cup bread crumbs
1/2 cup reduced fat shredded cheddar cheese
1/2 cup light sour cream
1-2 tablespoons parsley
PROCEDURE
Cut squash into halves. Scrape and remove pulp. Add margarine and saute squash and onions until tender. Cook sausage. Combine squash and remaining ingredients. Spoon mixture into shells. Sprinkle with parsley. Bake at 375 degrees for 20-25 minutes.
