Grilled Vegetable Muffuletta from O Ya Ya's


Eggplant medallions
3-4 squash medallions
3-4 zucchini medallions
3-4 strips grilled Portobello mushrooms
1/4 cup olive mix
1/4 cup mozzarella cheese


Saute vegetables with olive oil, salt & pepper to taste.    Place vegetables on muffuletta bun (or substitute for crusty French bread), add olive mix and cheese.   Enjoy!
