Island Grilled Mahi from Islamorada Fish Co.

INGREDIENTS

8 oz mahi fillet
as needed Teriyaki glaze
3 oz pineapple relish
1/2 slice pineapple (slice 1/2 inch)
5 oz fresh vegetable
5 oz rice
3 pineapple leaves

PROCEDURE

  • place service side down on grill and cook for 2 and 1/2 minutes
  • turn by 1/4 to achieve grill mark and cook for 2 and 1/2 minutes
  • flip mahi over and continue cooking for 2 and 1/2 minutes. Baste with teriyaki upon removing from grill
  • place pineapple on grill to mark each side
  • mound rice in center of plate. Lay Mahi from 9:00 to 3:00 slightly atop rice
  • place pineapple relish in center of rice and three pineapple leaves toward 11,12, and 1:00
  • place vegetable from 10:00 to 2:00
  • place 2 quartered pineapple at 3:00
